Cajun boiled peanut hummus

1.5 cups of cajun boiled peanuts, shelled *refer to my recipe (set a few aside to use as a topper)

3 tbsps olive oil

4 cloves roasted garlic (roast a few extra to use as a topper)

1-2 tbsps of lemon juice

Sun-dried tomatoes (use as a topper)

Feta cheese (use as a topper)

Blend boiled peanuts, olive oil, & lemon juice in a food processor until smooth. Top with feta, sun-dried tomatoes, roasted garlic, peanuts, & olive oil.

Serve with pita bread or pita chips & enjoy!
